I have a client who wants a copy of all email sent to his domain. Is there a system that would allow me to do that?

use the "catch-all" feature in the email settings of the cPanel. This will send all email to blahlbah@yourdomain.com to a specified email address.
Is that what you are looking for?
But you have to be careful when using that, because you will get a ton of spam emails

not really, at least I don't think. if I have mailboxes set up at admin@domain.com, user1@domain.com, and user2@domain.com, I need any mail sent to user1@domain.com and user2@domain.com to be BCCed to admin@domain.com.
the catch-all will, like you said, just spam the guy to death =d

So I just tried this, and it seam to work
You have admin@domain.com, user1@domain.com, and user2@domain.com as each email account.
If you set up forwards for user1@domain.com, and user2@domain.com to admin@domain.com it will forward anymail to admin@domain.com and still let user1@domain.com, and user2@domain.com send and receive email.
So what I did, set up an account called estimations@mydomain.com then set estimations@mydomain.com to be forwarded to admin@mydomain.com. Both accounts were able to receive the email. If admin were to delete it, it would still stay in estimations inbox
Does that make any sence at all?

yes, it made perfect sense =D thanks for the help!
and thank you for the compliment as well =D I'm not too proud of the 'redneck store' site, it was kindof a hack job, and OSCommerce was really horrible (I thought, anyway). I'm more of an XHTML kinda guy, and OSC is more of a tabular-layout kinda..well, mess. the next Ecom site I do is definitely going to be in ZenCart or something more neat and manageable =d
