You really can't change the chatroom just the page you embed it in. It's extremely simple and a little annoying. If you really want a Java based chat try ...

... it's the old sigmachat that's been updated. There is still a free version and you can do some basic modifications for your webpages. :)

However. if you'd like complete control youd do better with one of the MySQL based php chats like http://phpopenchat.org

about chat room, try parachat.. where you can signup free account, and the processing is done at parachat, and free up your server.
