How do I configure my Spam mail to be sent to a catch Address?

In the past I have configured my Spam to go to Spam@mydomain.com but for some reason I can't get it to do so anymore, can anyone here please refresh my memory as to what I need to do. I have attached some images of my screens maybe someone can see what I did wrong. ALso under the Spam assasin settings (configure)

score NO_DNS_FOR_FROM

can i change these? add to them? is there a manual that would explain this area better?
